Many of the decisions that move millions, transform the region, or redraw political balances are cooked up—literally—in the kitchens of certain restaurants, terraces, and private rooms where discretion is more valuable than the daily dessert. Why this list? Because knowing the map of power also means understanding its rituals, its spaces, and its silences. Far from the spotlight, at closely reserved tables, urban planning licenses, hotel mergers, sponsorships, cultural plans, and pacts are negotiated that rarely reach the media but do come across over a glass of wine in the right place.

From the sophisticated panoramic lounges of Playa del Inglés to the neighborhood bars of El Tablero where the strings of popular power are pulled, this list captures the hot spots—or rather, the mild and discreet ones—where conspiracies with a Canarian accent and global ambitions are conspired. This isn't about glorifying secrecy, but rather understanding the local political and economic culture in its most human context: around a table, with or without a tablecloth, and always with an eye toward the future. Maspalomas is a business environment that thrives on power lunches, and as Albert Einstein once wisely said: "An empty stomach is not a good political advisor."

1. Samsara Restaurant (Maspalomas)
Decorated like a temple of hedonism, with giant Buddhas, incense, and dim lights, Samsara isn't just a place to dine on prawn curry: it's where developers, councilors, and the occasional foreign magnate who prefers to remain unnoticed meet. Important decisions always come at the end of the day.

2. Time Maspalomas (Playa del Inglés)
A haven for discreet businesspeople, investment fund meetings, and nouveau riche who don't want to be noticed. Here, voices aren't raised, but things get signed. The international cuisine and impeccable service do the rest.

3. The Senator (Lighthouse Boulevard)
A classic of classics. Facing the iconic Maspalomas lighthouse, El Senador is like a gastronomic parliament. It doesn't speak loudly, but it makes strong decisions. It's a frequent meeting place for urban planning consultants, tourism veterans, and the occasional real estate developer from another era.

4. La Palmera Sur Restaurant (Hotel Gold by Marina)
Where young hoteliers negotiate with low-profile politicians and island planning experts. There's no press. There are black pork baos and mojitos with edible flowers. A relaxed atmosphere, but beware: the ground is moving here.

Although modest in appearance, this bar is a regular setting for private debates and agreements that impact everyday life, demonstrating how power is also built on prudence and traditional Canarian food.
