The Nutrition and Dietetics expert participated in the course 'Nutrition: No Time for Diets', held at the Maspalomas Cultural Center.
"There is no one-size-fits-all diet, but rather a 'perfect diet' for each individual metabolism and each moment in life," stated Antonio Garzón Beckmann, an expert in nutrition and dietetics, during the course "Nutrition: No Time for Diets" at the 33rd Maspalomas Summer University.
In his lecture 'In search of the ideal diet', Antonio Garzón explained a simple algorithm for each person to design the path towards their 'perfect and personalized diet', based on the new 'Mediterranean Diet', it can be adapted to personal needs, in different steps, with the consideration and prevention of certain pathologies, where special attention will be paid to sugar (glucose spikes), the level of vegetalization of the diet and the optimization of meal times, in accordance with the 'internal biological clock' of each metabolism, adjusting it at each stage of life and considering certain 'antiaging' characteristics to achieve healthy aging.
In his second lecture, 'Evolution of Diets: From Classic Diets to New Generation Concepts', Antonio Garzón offered different nutritional approaches and their impact on health, from the Atkins or Dukan diets, to flexitarian and intermittent fasting, as well as glycemic index diets, alkaline diets, the Paleo diet, the new Mediterranean Diet, the Harvard plate, vegetarian, vegan and flexitarian diets, the eco-sustainable plate and diets classified as 'anti-aging'.
Antonio Garzón Beckmann stated that "proper nutrition, along with physical activity, rest, and other habits, contributes to delaying and even reversing the aging process." In his lecture, "Antiaging Nutrition: Beyond the Blue Zones," Garzón outlined the characteristics a diet should have to be considered "antiaging" and presented some nutritional keys to boosting longevity.
Garzón gave as an example the diets followed by residents in the so-called 'blue zones', in addition to the Valter Longo diet (called the 'longevity diet') or the characteristics of Hiromi Shinja (the 'prodigious enzyme'), to subsequently break down a dozen specific processes related to anti-aging, such as glycation, oxidation or the reduction of telomere length, in addition to specifying ingredients, diets and habits that slow down each of these processes to promote healthy aging.
In her first presentation, nutrition and dietetics expert Roser López Sánchez, entitled "Meaningful Eating: Nutritional Keys at Every Stage of Life," addressed the keys to a healthy diet tailored to each stage of life, from pregnancy through early adulthood and adulthood. Her approach, based on scientific evidence, proposes "understanding nutrition not as a single, unchanging model, but as a dynamic tool capable of preventing disease and promoting well-being."
During the presentation, she analyzed critical moments such as childhood, adolescence, pregnancy, and breastfeeding, and explained how proper nutrition influences physical and cognitive development, but also determines each person's future metabolic health.
In her second presentation, entitled "Beyond Change: Nutrition and Strength in Menopause and Healthy Aging," Roser López Sánchez emphasized that "aging can be a time of fulfillment if it is experienced with knowledge and self-care." The nutrition expert emphasized that nutrition and strength training can become key tools for improving the quality of life of women over 40.
Roser López explained how to adapt your diet to the changing hormonal, metabolic, and muscular needs of each stage, prioritizing quality proteins, fiber, omega-3s, and micronutrients such as vitamin D and magnesium. She also spoke about the importance of strength training, "not only to prevent diseases such as osteoporosis, type 2 diabetes, or cognitive decline, but also as a tool to gain confidence, functionality, and emotional well-being."

Tomorrow's session will begin at 10:00 a.m. with the presentation "Anti-aging Nutrition: Beyond the Blue Zones," by Antonio Garzón. At 10:45 a.m., Lilly Rikhter will speak on "More than Medicine: How Ayurveda Rewrote My Story."
At 11:50 a.m., Juan Ignacio Caverzaschi will present "Techniques for preparing healthy dishes." To conclude the day, at 12:40 p.m., Antonio Garzón Beckmann will give a talk on "No time for diets: How do I integrate my ideal diet into my lifestyle?"
