The book, 'Raising Awareness about Food Waste: A Recipe Book for Making the Most of Leftovers', is promoted by the University of Las Palmas de Gran Canaria and contains 25 recipes
SPAR Gran Canaria participated this Monday, December 1st, in the presentation of the book "Awareness about Food Waste: Recipe Book for Making the Most of Food," a work promoted by the University of Las Palmas de Gran Canaria and sponsored by the supermarket chain that includes recipes and recommendations aimed at promoting responsible consumption.
The event, which took place at the Rectorate of the University of Las Palmas de Gran Canaria, in Vegueta, was opened by the rector of the institution, Lluís Serra, and was attended by the president of the Las Palmas Food Bank, Pedro Llorca, and the vice president of SPAR Gran Canaria, José López.
This publication stems from the work developed in the workshops of the Science and Gastronomy Cultural Center at the University of Gran Canaria, in collaboration with the Las Palmas Food Bank and the GastroFood Hub. The manual highlights resourceful cooking, local produce, and Canarian culinary traditions through 25 recipes. It also offers practical suggestions for giving a second life to ingredients and food surpluses.
In this regard, SPAR Gran Canaria maintains a constant collaboration with the Las Palmas Food Bank through several annual campaigns, such as the Spring Collection or the Great Food Collection.
Furthermore, the company is committed to promoting education that encourages responsible consumption. Through initiatives such as the certification of controlled ripening of Canary Island bananas, it has reduced waste at the source and guaranteed the quality of the local product, better aligning supply with actual demand. This process prevents the waste of approximately 10.000 kilos of the product each year.
This commitment to sustainability is reflected in the 2022-2024 sustainability indicators, which show that the company has managed to reduce in-store waste by 0,78%, thanks, among other measures, to order optimization. These results have been particularly noticeable in sections such as the butcher, fruit, and vegetable departments.
